Rüdemann tonic biscuits

Rudemann biscuits
What do you do if you love biscuits but also gin and tonic? That's right, gin and tonic biscuits. Super tasty and something new. Here is our recipe for you:
Ingredients:
2-3 organic lemons
400g flour
300 grams of sugar
125g powdered sugar
A packet of butter (250g)
Two yolks
10cl Rüdemann juniper
200ml tonic water
A pinch of salt
How to do it:
For the dough, wash an organic lemon in hot water, dry it and finely grate the zest. Mix with flour, 200 g sugar and 1 pinch of salt. Add egg yolk, butter and 6cl Rüdemann juniper. First knead with the dough hook of your mixer, then with your hands to form a smooth dough. Cover and chill for about 30 minutes.
Boil the tonic water with 100 g sugar for about 4 minutes on the stove. Peel all the lemons so that the white skin is almost completely removed. Now cut the lemons into very fine slices and let them take a long bath in the still hot tonic syrup.
Preheat the oven to 180 degrees and line two baking trays with baking paper. Roll out the dough about 1cm thick and cut out biscuits with a diameter of about 5cm in the desired shape and spread them on the trays. Now dab the lemon slices on kitchen paper and place them on a cookie that has been cut out. Press lightly and bake in a hot oven for 15-20 minutes until golden brown. Take out and let cool down.
Now only the Rüdemann icing is missing: Simply mix the powdered sugar and 4cl Rüdemann juniper, drizzle over the biscuits and leave to dry. Tip: If the icing is still too firm and cannot be "dripped" properly, simply add 1-3cl Rüdemann until the icing has the desired consistency.
